Cheesy Beer Dip

Summer time is the best time of the year. As you know, I live in NY where it’s too cold to sit outside most of the year. I have to take advantage of the few nice days we have. I hate to waste my summer in the house slaving over the hot stove. My new obsession with cast iron pans has helped with that.  I have been doing a lot of cooking outside this year. #HouseofBBQ I made Cheesy Beer Dip with nachos for a late night snack while sitting out on the deck. Why not combine the two things we both love cheese and beer?

For this recipe it is pretty simple you only need a couple of things. 1 Blue Moon Beer, 1 package of Cream Cheese, 1 Stick of butter, and 1 cup of cheddar cheese.  Scallions for garnish (optional).DSC_0431

Fire up your outdoor grill or you can do this in the house over a medium heat. In a 10″ Cast Iron skillet Melt 1 stick of butter. Add your cream cheese and Blue Moon beer until cream cheese is melted. Add in 1 cup of cheddar cheese. continue cooking 1-2 minutes over a medium heat or until cheese is bubbly.

Immediately pour into a bowl and serve with nachos. Warning this dip is very addicting. This is one of our families favorite dip. I hope you enjoy it as much as we did. It is also great for the big game days. When we finished our nachos we decided we needed something sweet and a few drinks to end the evening. I stopped over to Price Chopper #HouseofBBQ right in New Hartford to pick up some Blue Moon Belgian White Beer for my husband and Redds Apple Ale for myself.  I found a huge display at the end of the dairy isle. While I was there I also picked up some Tyson Chicken for my son.  We sat on my back deck for the evening and enjoyed some ice cream and a few drinks.DSC_0006

Because of such a great experience that I had purchasing Blue Moon and Redds Apple Ale at Price Chopper, I always make sure to get Blue Moon and Redds Apple Ale at Cavallos, Carmella’s Cafe or DeFazios in New Hartford.  How do you spend the evenings in the summertime?
