In my house Eggplant Parmesan is a family favorite meal. I wanted to share this recipe with all of my fans.
You will need:
1 Tomato Sauce
2 large eggplants
2 cups of seasoned bread crumbs
1 cup of milk
1 cup of flour
16 oz of mozzarella cheese
I like to remove the skin off my eggplant. Slice them all thin and spread them out on a paper towel. Salt the top of all the eggplants and cover with another paper towel let it sit for about 2 hours. This take the bitterness out of eggplant. Preheat your oven to 350.
Prepare a breading station. 1 with 4 eggs slightly beaten, 1 with milk, 1 with flour and 1 with breadcrumbs. Dip each eggplant in milk, flour , egg, and last bread crumbs. Set aside. Meanwhile on the stove top cover the bottom of a skillet with olive oil. Fry each eggplant until golden brown on both sides.
Pour sauce in the bottom of a cast iron skillet. layer with eggplant, Parmesan cheese, mozzarella. Repeat another layer. Sauce, Eggplant, Parmesan cheese Mozzarella. Until your pan is full. Top with more cheese and bake for 30-45 minutes or until cheese is melted.
