Or maybe you want it to be a little heartier, then add in the rice. I have made it both ways and both are outstanding.

- 3 large chicken breast, cubed
- 4 tbs olive oil
- 1 med onion
- 2 med peppers
- 1 cup rice
- 1 package taco seasoning
- 1 tbs cumin
- 1 packet goya powdered chicken bouillon
- 1 packet sazon goya seasoning
- 1 12oz jar of goya sofrito cooking base
- 80 oz chicken broth
- 1 15 oz can black beans
- 1 cup rice
- 1 10 oz can rotel diced tomatoes and chilies
- 1 1/2 cups frozen corn
- place pot on saute
- Add oil, onion, pepper and chicken
- Cook 2-3 minutes until onions are tender
- Add Broth, Tomatoes, Beans, corn, Rice, and all seasonings.
- Place on manual high pressure for 15 minutes
- Do a quick release.
