Making the Most of Me time

Motherhood is the most exhausting job on the earth. In this day and age, we are all so busy working, taking care of kids, soccer practice, laundry, dishes, and let’s not forget the constant taxi service for the kids. We have so much on our plates and just keep going. Sometimes it is hard to even sit back and take a breath and relax. I don’t know how some moms do it with no down time. I do not get much down time so when I do have it, I try to make the most of “Me Time” since it is essential for my sanity.  Taking time out for “Me Time” makes me a better mom. I feel more equipped to deal with the busy schedules and problems that arise on a daily basis.

Making time for just you, once a week, can be as simple as reading your favorite book or magazine, making your favorite snack and grabbing a cup of coffee. I ran over to my local Kroger to pick up ingredients to make my favorite treat, cookie cake with cookie butter buttercream, and I also stopped by the magazine aisle and picked up the latest copy of Style Watch magazine. One of my favorite “Me Time” activities is curling up with a cookie and great magazine. This month’s issue of Style Watch is filled with spring fashion that you cannot miss out on!

Ingredients:

  • Cookie Cake –
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • Pinch salt
  • 1 box instant vanilla pudding (not cook n serve)
  • 3/4 cup melted butter
  • 1 cup brown sugar
  • 1 egg
  • 1 egg yolk
  • 1 tbsp. vanilla
  • 1 cup chocolate chips

 

Cookie Butter Buttercream –

  • 2 egg whites
  • 1 cup granulated sugar
  • 1 cup butter (softened to room temperature and chopped into pieces)
  • 1 tsp vanilla
  • 1/2 cup cookie butter
  • Directions:
  • Cookie Cake –
  • Preheat oven to 350
  • Butter a 9in pan and line with parchment paper. A spring form or loose-bottomed pan will work best
  • Whisk together flour, baking soda, salt, and pudding powder until there are no lumps
  • Combine brown sugar and melted butter and mix until smooth
  • Add in vanilla, then add in the egg and egg yolk one at a time while the mixer is still going
  • Pour dry ingredients into the butter mixture. Do this very slowly. Do not overmix flour otherwise, you will get a tough cookie.
  • Mix in chocolate chips by hand with a rubber spatula
  • Press dough into prepared pan. The dough will be sticky.
  • Bake for 21-24 minutes or until the top/center starts to golden.
  • After taking out of the oven, let cookie cake cool in the pan completely before adding the frosting.
  • Cookie Butter Buttercream:
  • Put egg whites and sugar in bowl of stand mixer. Whisk these ingredients together over a pot of simmering water. Do this until the granules of sugar have dissolved.
  • Put bowl back on stand mixer (fitted with the whisk attachment) and mix on a high speed until the mixture is no longer warm and has gone very pale and fluffy
  • Add in butter piece by piece. Do this very slowly.
  • Add in vanilla
  • Turn off the mixer and fold in the cookie butter Frost your cookie cake and enjoy. You can also add Edible cookie dough to make this an extra special dessert.
