But now with my Instant Pot, I can make pot roast anytime we get a craving because it cooks incredibly fast and leaves our pot roast so tender and juicy!
Pot roast is a meal that we grew up eating pretty much every single weekend. Our pot roast consisted of meat, carrots, potatoes, and of course, grab the homemade gravy and dinner rolls. It was one meal I think the whole family looked forward to, and we never got sick of it. She always would cook it in the oven all day long, nice and slow. So when you pulled it out the meat would just shred instantly, and the flavor was spectacular and it was nice and juicy. One of my favorite parts was the potatoes, they tasted so good soaked in the juices!

This pot roast was very tender and shreds very easy and bursting with flavor. The veggies were very tender but not overdone like you would think. But, we live in a world where we have an Instant Pot that can tackle any meal pretty much in a fraction of the time. So now I can make this ultimate instant pot, pot roast anytime I want. I don’t have to make sure I am home to monitor the roast the entire day. With the natural release at the end of the cook time, it really helps tenderize the meat and locks in all the flavors like it has been cooking the entire day. You pull it out and dish it up for that same flavor you grew up eating.
Browning your roast on both sides adds a whole new flavor and texture to your meat. I learned that years ago, and I always quickly braise both sides. It will help create a little crust and the seasonings you put on will lock in, and it adds so much flavor and keeps your roast nice and moist as it cooks. The Ultimate Instant Pot Pot Roast
- 2-3 pound Chuck Roast
- 1 onion
- 1 cups beef broth
- 1 cup red wine
- 4 chopped carrots
- 4 large potatoes in large cubes
- 2 stalks chopped celery
- 2 tbs Italian Seasonings
- 3 tbs A1 steak sauce optional
- 3 cloves garlic
- 2 tbs olive oil
Place your pot on Saute.
- pour olive oil in and your roast just to brown both sides about 1-2 minutes per side.
- Remove roast and place potatoes carrots and celery in the pot.
- Top with onions and garlic. Pour wine and beef broth in the pot.
- Place your Roast right on top of the veggies.
- Spread seasonings over the top of your roast along with A1 sauce.
- Put your Pot on MANUAL HIGH PRESSURE for 55 minutes do a Natural release.
- Remove and enjoy!
