Ingredients for Crock Pot Cheeseburger Soup:

  • 1 Pound Ground Beef: This recipe can use lean ground beef, sausage, or ground turkey.
  • 2 cups Diced Potatoes: Russet Potatoes work best for slow cooker soups.
  • 8 Oz Cream Cheese: Room temperature cubed.
  • 8 oz Velveeta Cheese: Cubed because this cheese melts the best in soup but you can use shredded Cheddar.
  • 1/2 Cup Chopped Onion: White Onions.
  • 1/2 Cup Chopped Celery: about 2 ribs finely chopped.
  • 1 Cup Chopped Carrots: 2 small carrots chopped.
  • 4 Cups Beef Broth: You can use low sodium or regular.

Cornstarch Slurry Optional:

  • 4 tbsp cold water
  • 2 tbsp cornstarch

Step-by-Step Directions for Cheeseburger Soup

  • Cook Ground Beef until no longer pink and crumbled. Drain grease.
  • Add ground beef, potatoes, carrots, onions, and celery to the slow cooker.
  • Place the cubed cream cheese and Velveeta cheese on top.
  • Pour the beef broth into the slow cooker. You can substitute it with chicken broth.
  • Cover and Cook on Low for 8 hours or high for 4 hours or until the potatoes are tender.

To Thicken: Mix together cornstarch and cold water. Add to the soup and continue cooking for 15 minutes or until thickened

  • 2 tbsp cornstarch
  • 4 tbsp cold water

Instant Pot Directions:

  • Place Instant pot on saute, and cook the ground beef until crumbled and no longer pink
  • Add all the veggies, potatoes, carrots, celery, and onions.
  • Pour in broth.
  • Cook on manual high pressure for 5 minutes, and do a quick release.
  • Put the instant pot on saute, Add Velveeta and cream cheese.
  • Thicken the soup with cornstarch slurry.

Tips & Tricks

  • Cook the ground beef the night before and add it in the morning before work.
  • Use ground turkey for a healthier options.
  • Use processed Velveeta cheese and cream cheese to make a thicker soup but you can use shredded cheddar instead.
  • Optional Toppings are great such as tomatoes, lettuce, pickles, extra onions, shredded cheese, cooked bacon, or even croutons.
