Ingredients for Breakfast Quesadilla

  • 4 Scrambled Eggs: Fluffy Eggs work best you can use a fried egg if the egg is fully cooked and not runny.
  • 4 Slices of Cooked Bacon: I used Air Fryer Bacon and chopped it up.
  • Shredded Cheese: Shredded Cheddar or Mexican blend cheese.
  • 4 Flour Totilla Shells

Optional Add On

  • Breakfast sausage
  • Chopped Bell Peppers
  • Onions
  • Salsa
  • chopped Ham
  • Sour Cream

Step-by-Step Directions for Breakfast Quesadilla Recipe

Assemble:

  • Lay Flour Tortilla Shell on a flat surface
  • Add a layer of cheddar cheese or Mexican blend cheese.
  • Next, add a layer of Scrambled Eggs.
  • Now you can add the bacon, we used Bacon, but you can use ham, breakfast sausage, or veggies like chopped peppers and Onions.
  • Add more cheese to the top then fold your egg tortilla in half.

Air Fryer Directions:

  • Pre-heat Air Fryer to 390 degrees.
  • Spray quesadillas with cooking spray or olive oil.
  • Air Fryer for 5 minutes then flip them over and cook for another 3 minutes until golden brown.

Stove Top Directions:

  • 1-2 tbs olive oil in the bottom of a cast iron skillet over medium heat cook for 2-3 minutes per side until golden brown.

Oven Directions:

Preheat oven to 400 degrees. Place quesadillas on a baking sheet. Bake for 15 minutes until golden brown and the cheese is melted.

Tips & Tricks

  • Spray Tortilla Shells with cooking spray or olive oil for a crispier crust.
  • Assemble Egg quesadillas ahead of time then fry when ready to serve.
  • Use your favorite breakfast meat in place of the bacon on these breakfast tortillas.
  • Place in the air fryer basket in a single layer.
