We love this version of minestrone soup for so many reasons. First of all, it is super healthy packed with lots of vegetables and protein. Not only that but it is based on the famous Olive Garden Minestrone soup recipe, but elevated with even more flavor and vegetables to create a super hearty meal the whole family will love.

This Olive Garden minestrone soup recipe is a healthy soup bursting with flavor as it combines fresh vegetables, beans, and pasta to give you an easy meal any night of the week. 

Ingredients

  • 4 cups vegetable broth ( or chicken)
  • 1 zucchini chopped 
  • 2 stalks celery chopped 
  • 2 carrots chopped (1cup)
  • 15 Oz cannellini beans drained
  • 15 Oz can diced tomatoes 
  • 1 cup frozen green beans
  • 15 oz can dark kidney beans
  • 1 cup spinach
  • 1/2 Onion chopped about 1/2 cup
  • 3 cloves garlic
  • 1 tbsp. Italian Seasonings
  • 1 Cup shells pasta 

Instructions

  1. Add all vegetables ( not the spinach) to your crockpot
  2. Add broth chicken or vegetable
  3. Add seasonings and stir
  4. Cook on high for 2 hours or low for 4
  5. Stir in pasta shells and cook for another 20-30 minutes until shells are tender
  6. Stir in fresh spinach allow spinach to wilt
  7. Serve and enjoy!
