I love the aromas that you smell as soon as you head in the door, and the flavor of the food is always out of this world! Over the past year, I have been perfecting my own version of Chicken Curry, and I have to say it tastes almost as good as the restaurants, if not better. 

You will love how easy this dish comes together and the flavor that pulls through in every single bite is one of a kind. Once you make this at home, you will find yourself making it each and every week.

What is the Difference between Curry Chicken and Chicken Curry?

Curry chicken is made with larger pieces of chicken and is often baked. Chicken curry is a curry gravy with small pieces of chicken and often has vegetables such as onion and pepper.

What are the basic ingredients of Curry?

While curry differs depending on which region you are eating it in you will usually find onions, garlic, garam masala, and turmeric.

What do I need to make Chicken Curry?

Spice Blend:

  • Coriander – a must for this curry
  • Cumin 
  • Garam masala – this is an Indian spice blend and can be found at most stores, all Indian stores and you can also order online
  • Bay Leaf
  • Turmeric – gives flavor as well as a nice color
  • Mint leaves – fresh is best, but you can use dry
  • Cinnamon
  • Black pepper
  • Cloves
  • Salt

Curry Ingredients:

Spice Blend:

  • 1 ½ teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1 teaspoon garam masala
  • 1 teaspoon turmeric
  • 1 bay leaf
  • 2 mint leaves, crushed or lightly chopped
  • ½ teaspoon ground cinnamon
  • ½ teaspoon ground black pepper
  • ¼ teaspoon ground cloves
  • 1 teaspoon kosher salt
  • 3 Tablespoons olive oil
  • 1 cup yellow onion, diced
  • 1 ½ Tablespoons minced garlic
  • 1 jalapeno, seeded and diced
  • 1 Tablespoon minced ginger
  • ½ cup diced tomatoes, about 2 Roma
  • ½ cup warm chicken broth
  • 1 15 ounces can of coconut milk
  • 1 ½ pounds boneless skinless chicken or thighs, cut into small pieces
  • 1 Tablespoon cornstarch
  • 2 Tablespoons cilantro, roughly chopped

How to Make This Chicken Curry Recipe

  1. Combine all the spices for the blend together in a bowl and set aside for use.
  2. In a large skillet, turn the heat to medium begin by heating the oil, then add the onion, garlic, jalapeno, and tomato. Cook for 4 minutes.
  3. Toss the chicken in the cornstarch, then add the chicken and cook for 10 minutes, stirring often.
  4. Add the warm broth and the coconut milk and let it simmer for 15 minutes. Add half the cilantro leaves and stir to wilt. Sprinkle remaining cilantro over curry when serving.
  5. Salt and pepper to taste.
  6. Serve with a side of rice and naan. 

Tips Tricks and FAQs

  • Traditional Indian dishes use whole spices that are toasted then ground fresh. This is a faster version so you can have curry a bit quicker for those busy nights.
  • Add in some other curry favorites like curry powder, coconut curry, Jamaican curry powder, habanero peppers, green or red pepper, carrots, celery, or even potatoes.  Each region in India makes this dish a bit different, so feel free to add the vegetables that you love.
  • Be sure to heat your broth in the microwave before adding. Cold broth often makes the meat tough.
