My favorite girl scout cookies are the Samoa cookies. There is something about the caramel and coconut mixed together. I wanted to try out an eclair with the same flavors I hope you enjoy this one.
You will need:
2 packages of White Chocolate instant pudding mix
3 cups of milk
1 12oz tub of whipped cream
1 box of graham crackers
1 cup of Caramel topping
1 cup of shredded coconut
For the Chocolate Icing:
3 tbs of baking cocoa
3 tbs of butter
3 tbs of milk
1 cup of powdered sugar
In a coat a 9×12 baking pan with pam cooking spray. Place full graham crackers in a layer on the bottom. Top with 1/2 of the pudding mixture. Place another layer of graham crackers on top of the pudding. Pour the remainder of the pudding mix over the top and top with more graham crackers.
In a separate bowl melt milk and butter together. Mix in powdered sugar and cocoa until smooth.
Spread the chocolate icing on top of your last layer of graham crackers. Drizzle with Carmel Sauce. Coat with coconut.
cover and place in the fridge overnight.
