Rasberry & Spinach Salad with Fresh Rasberry Vinaigrette

For the Rasberry Dressing

You will need:
1/2 cup fresh or frozen (thawed) raspberries
2 tablespoons lemon juice
2 tablespoons red wine vinegar
1 teaspoon sugar
Pinch of salt
1/4 cup canola oil
Place raspberries in a bowl and crush with a fork. ( I used a potato masher) Whisk in remaining ingredients until well blended. Cover and chill. Whisk just before using.

For the Salad you will need:

Fresh Spinach

1/2 cup of  pecans

1/2 cup of fresh rasberries

1/4 cup of Gorgonzola cheese

Place the spinach in a bowl top with rasberries, peacans, and cheese. Top the salad with the Fresh Rasberry Vinaigrette.
