What do I need to get started?

  • Fresh shrimp, cut into small pieces (leave some whole for topping)
  • Full fat cream cheese
  • Sour cream (mayonnaise can also be used)
  • The zest and juice of one lemon
  • Chives (green onion can also be used)
  • Parsley
  • Hot sauce – I prefer Slap Yo Mama but any southern hot sauce in a bottle is fine
  • MInced garlic
  • 1 small onion
  • Green and red bell pepper – for some nice crunch and color

Ingredients:

  • 8 oz cream cheese
  • ⅓ cup sour cream
  • Juice and zest from 1 lemon
  • 1 Tablespoon minced chives
  • 1 Tablespoon parsley, minced
  • ¼ cup pepper jack cheese
  • ¼ cup grated parmesan cheese
  • 2 Tablespoons Slap Yo Mama hot sauce
  • 1 tbsp butter
  • 2 cloves garlic, minced
  • 1 small onion, chopped
  • 1 green pepper, diced
  • 1 red pepper, diced
  • 1lb fresh shrimp (frozen is okay too)
  • 2 tsp Creole seasoning 
  • Shredded cheddar cheese, for topping

How to make Spicy Shrimp Dip

  1. Preheat the oven to 375 degrees.
  2. In a large mixing bowl, mix the cream cheese, pepper jack cheese, parmesan cheese, sour cream, lemon juice, zest, parsley, chives,  and Slap Yo Mama hot sauce, then set aside.
  3. Melt 1 tbsp butter in a pan over medium high heat. Add the chopped bell pepper, chopped onion, and minced garlic and saute for 3-5 minutes.
  4. Meanwhile, chop your shrimp into bite sized pieces, leaving a couple of shrimp whole for garnish.
  5. Once vegetables are soft, add shrimp and cajun seasoning and saute for another 2 minutes, or until shrimp are cooked all the way through.
  6. Add the shrimp and vegetables to the cream cheese mixture and stir, then transfer to a prepared baking dish.
  7. Top with shredded cheddar and bake for 15 minutes, or until the cheese is melted and the edges are bubbly.
  8. Top with remaining shrimp and a few dashes of hot sauce.
  9. Serve warm with chips, baguettes, or crackers.

Tips Tricks and FAQs

  • You can buy the shrimp already cooked from the grocery store (but my recommendation is always to cook the shrimp yourself – so you can get all the flavor from sauteing the onion, pepper, and garlic together with the shrimp.)
  • If you are sensitive to heat, you can leave out the hot sauce (but keep the seasoning!). The hot sauce can be replaced with worcestershire sauce, if desired.
  • Swapping the sour cream for mayonnaise would lend to a wonderful tangy flavor.
  • Test out different cheeses – mozzarella or gouda would make this dip even richer and creamier.
  • Creole or cajun seasoning can be bought packaged at the store – but if you cannot find it, it can easily be made with spices already on your rack with this homemade creole seasoning blend
  • I do not recommend swapping out the onion and garlic with powder – using the fresh ingredients will give a much more satisfying flavor.

Storage

You will want to store your dip in an airtight container in the refrigerator until ready to use.  This can be stored for up to 5 days. 

I do not recommend freezing it. 

Can this be made ahead of time?

Yes! You can make this ahead of time up to 8 hours. Just place it in the fridge and pull it out about an hour before serving, then bake in the oven at 375 for 20 minutes. This dip is best served hot.

How long can I keep this as a leftover?

This will hold for three days covered and refrigerated – but you will probably not have to worry about leftovers after serving this at a party!
