Instant Pot Italian Wedding Soup
There is nothing better or more southign to the soul than a hearty bowl of homemade soup. The Instant Pot has really been a blessing in my home. I made my favorite Italian Wedding Soup in under one hour from a whole raw chicken. I must say this is AMAZING.
For this easy recipe you will need:
1 3-4 pound whole chicken
1 cup large cut up carrots
1 head of escrole
1 28 oz can of diced tomatoes
32 oz chicken Broth
10 meat ball cut in quarters
2 celery stalks chopped
1/2 pound of your favorite pasta
Directions: Place your whole chicken in the instant pot with 2 cups of water. Set it on the poultry setting for 20 minutes. Do a natural pressure release. Remove the Chicken all bones and remove all meat off the chicken. The chicken will be falling off the bone. Place the meat in your Instant Pot. Add in all your carrots, celery, full can of tomatoes, and chicken broth and your meatballs quartered. The meatballs should not be bigger than 1″ they will expand in the broth. Place your Instant Pot on Soup setting for 10 minutes and use the Natural Pressure Release. Remove lid and place your pot on saute. Add in your pasta and Escrole. Place on Soup setting for 2 more minutes and do a quick pressure release.
