I am back again with another time saving instant pot recipe to give a try! This one-pot Instant Pot Beef Tips & Gravy with Mashed Potatoes recipe was truly a breeze to whip up, thanks to the instant pot. You have tender beef tips that are smothered in rich brown gravy, and then, of course, the creamy mashed potatoes help complete this soulful and hearty dish.
Now, how do you define what a comfort dish may be? Is it that favorite cobbler you grew up eating with a tall glass of milk, a hearty bowl of soup? For our family, it is mashed potatoes and gravy with any kind of meat. We love comfort dishes that are a mix of protein with a side of mashed potatoes, so this dish right here, for sure qualifies as one delectable comfort dish to me.
It is so amazing to me how a single spice or dish like this can take you all the way back to your childhood roots. Do you ever notice that? Maybe it is a sip of your grandma’s iced tea, or fried potatoes fresh out of the cast iron skillet. I love when you make a dish and it reminds you of a fond memory from your childhood. I get that with this dish because it is something we grew up eating on a regular. Granted not in the instant pot, just because they weren’t invented back then. But the instant pot helps speed the cook time up and offers that melt in your mouth meat and flavor that instantly takes me back.
Next time you feel like you are in the mood for a comfort food dish, I highly recommend giving Beef Tips and Gravy with Mashed Potatoes recipe a try! Not only is it fast, but it is packed full of wholesome flavors that will leave your tummy stuffed and your heart satisfied.

What Are Beef Tips Exactly
I have heard some ask what is beef tips? Depending on your store and the part of the country you live in, you might call things a little different. Beef tips are just a specific cut of meat that is smaller bite-sized pieces. You want to look for beef tips or even tenderloin tips or sirloin tips when you are at the store. Each cut of meat will offer you a little bit of a different result, but some stores only sell one type of these cuts of meat.
A good rule of thumb is to look for a tenderloin, and if you don’t see one ask the butcher or retailer what they recommend. Most cuts of meat will work for this, even if it is a roast that you cut up yourself. Because it is cooked in the instant pot it will help really break that meat down and give you that melt in the mouth tenderness. So the cut of meat doesn’t have to be as precise as if you were cooking on the stove. If you did cook on the stove and used a different cut besides tips, it could leave you with a really chewy texture. But like I said the instant pot works great at breaking your meat down so it is tender, and you don’t have to be as particular on the cut of meat you use.
Now for this amazing Recipe 🙂 I used a Sirloin Steak for this recipe and cut it up into 1″ cubes although you can also use Beef Stew meat.
