- 1 tbsp olive oil
- 1 small onion
- 1 cup chopped carrots
- 2 stalks chopped celery
- 2 cloves garlic
- 4 cups Chicken Broth
- 1 pound chicken breast
- 1 pound meatballs, 1" meatballs
- 1 head Escarole or fresh spinach
- 1 cup orzo pasta
- 2 Eggs
- 2 tbsp parm cheese
- Place your pot on saute.
- Add olive oil, chopped onions, minced garlic, and celery
- Cook on saute for 2-3 minutes until onions are soft
- Add Chicken Broth, Chicken breast, and Meatballs.
- Place on manual high pressure for 10 minutes
- Do a Quick Release
- Remove chicken and Shred
- Place back in the pot.
- Add Chopped Escarole and pasta
- Place pot on manual high pressure for an additional 2 minutes
- Do a quick release.
- in a small bowl wisk together 2 eggs and parm cheese.
- Stir the mixture into your soup while the soup is still hot. Don't worry your eggs will be cooked from the heat of the soup.
