Grilled cheese in a cast-iron skillet is the ultimate comfort food in my house. The sharp cheddar cheese melted between thick slices of bread with a crispy crust and a hint of Maille mustard then garnished with some fresh Parmigiano Reggiano.
I really love grilled cheese sandwiches and tomato soup. Ever since I was a kid this was my favorite food. I always had the same basic sandwich growing up: American cheese and canned tomato soup. Now that I am grown I still like grilled cheese sandwiches and tomato soup, but I like to dress them up with better cheese like Herkimer Sharp Cheddar Cheese and some homemade Instant Pot Tomato Soup.

- Cast Iron Skillet
- 8 slices white bread, thick-cut
- 1 stick of butter, softened
- 1/4 cup whole grain mustard
- 8oz sharp white cheddar, shredded
- Grated parmigiano reggiano, for garnish
How to make the best ever grilled cheese:
Shred white cheddar, set aside.
Heat cast-iron skillet on medium-low heat.
Butter one side of each piece of bread.
Spread the whole grain mustard on the other side of each piece of bread.
Sprinkle 2oz shredded cheddar on each sandwich and place another half of bread on top.
Grill butter side down until golden brown and crispy, about 2 minutes per side.
Sprinkle each side with the Parmigiano Reggiano, serve immediately.

You have the heat up a little too high. The pan is too hot. Turn the heat down to a medium-low.
