My chicken tortilla soup Instant Pot recipe is one that I get asked a lot about. I finally sat down and got it all ready for you to enjoy. This is one of my go-to freezer soup recipes I keep stocked up in my freezer. Then on those days where I am craving a little spice or a hearty soup, I pull it out, heat it up and serve.

Can I Use Pre-Cooked Chicken In Instant Pot Chicken Tortilla Soup (Zero WW Points)

Absolutely! I love to batch cook chicken in my Instant pot and then divide it up into servings and toss in the freezer. Then for meals just like this, use it to replace raw chicken. It speeds up the cooking time and still offers rich and tasty chicken in every single bite. My only word of advice is not to use overly seasoned chicken in the recipe. If it has a lemon pepper seasoning on it, you might not get a great flavor pairing with spices in this recipe.

Sure. You can leave out the chicken and cook it without, and still get a flavorful soup. Add in a few extra beans for added protein. Vegetarian tortilla soup is just as tasty, in my opinion. You could also chop up some tofu and add that in at the end of cooking and let it warm up in the hot broth.

Instant Pot Chicken Tortilla Soup is a hearty and satisfying soup recipe. Plus this is a Zero Point recipe On Weight Watchers that makes this recipe even better! 

Ingredients

  • 2 large chicken breasts (2 pounds)
  • 1 8 oz can corn Or Frozen
  • 1 16 oz can black beans
  • 1 16 oz can Rotel with chills
  • 14 oz can of crushed tomatoes
  • 1 large onion chopped
  • 4 cups chicken broth
  • 1 tbs garlic powder
  • 2 teaspoons cumin
  • 2 teaspoons chili powder
  • Optional: 1 Jalapeno diced
  • Tortilla Strips

Instructions

  1. Place Onions, Corn, Beans, and tomatoes in the instant pot.
  2. Add Chicken I used frozen
  3. Add seasonings
  4. Add chicken broth and crushed tomatoes.
  5. Cook on manual high pressure for 30 minutes
  6. do a quick release
  7. Remove and shred the chicken
  8. Place chicken back in the soup
  9. Serve

Just made this after searching for zero point soup and it’s GREAT!

I did drain the beans and corn (I think there was a question below). Also, I only had 10oz cans of the Rotel w/chilis, so I did 20oz. I also used only 8oz of crushed tomatoes to balance the overuse of the Rotel. Lastly, I only had half a large red onion and chopped it up and it was enough. :)

Thank you so much for this recipe - it is YUMMY! We have leftovers and I can’t wait.

This was really tasty and easy! I used leftover chicken so that cut my cook time way back. I also substituted some mild salsa for the rotel because I didn't have any rotel. It came out very good. I will make this again!
