  • 1 pound ground beef
  • 3 tablespoons taco seasoning

  • 1 (15 ounce) can black beans, rinsed and drained
  • 2 cups shredded Colby jack cheese
  • 1 cup crumbled queso fresco
  • ½ cup sour cream
  • ¼ cup chipotle ranch dressing
  • ¼ cup sliced green onions

  1. Preheat your oven according to the package instructions for the frozen tater tots. Or you can use Air fryer Tator Tots
  2. Arrange the tater tots in a single layer on a parchment paper-lined baking sheet and bake the tater tots according to package instructions.
  3. While the tater tops are baking, heat a skillet over medium heat.
  4. Add the ground beef to the skillet and cook until browned and no longer pink, about 5 minutes.
  5. Add the taco seasoning to the skillet along with 2 tablespoons of water. Stir well to combine. Cook for another 1-2 minutes, then remove from the heat.
  6. Once the tater tots are cooked and crispy, remove them from the oven. Sprinkle the cooked ground beef over the tater tots.
  7. Sprinkle on the black beans, diced tomatoes, and red onion. Generously sprinkle the shredded colby jack cheese over everything.
