Sausage Crescent Rolls Recipe
- Preheat your oven to 350°F (176°C) and line a baking sheet with parchment paper.
- In a large skillet over medium heat, add the chopped bacon. Cook until the bacon is crisp and the fat is rendered, about 5-7 minutes. Use a slotted spoon to remove the bacon and set it aside on a paper towel to drain, leaving the bacon fat in the pan.
- In the same skillet with the bacon fat, add the chopped onion and celery. Sauté for about 3-4 minutes until they begin to soften. Add the minced garlic and cook for another minute until fragrant. Remove from heat and let it cool slightly.
- In a large bowl, combine the cooked bacon, sautéed vegetables, pork sausage, parsley, ground thyme, salt, pepper, panko breadcrumbs, and eggs. Mix well until all ingredients are thoroughly combined.
- Unroll the crescent roll dough and separate into triangles. Spoon about 2-3 tablespoons of the sausage filling onto the wide end of each triangle. Roll up each triangle, starting from the wide end and rolling towards the point. Place each roll, seam side down, on the prepared baking sheet.
- Place the baking sheet in the preheated oven and bake for 15-18 minutes, or until the crescent rolls are golden brown and the filling is cooked through.
- Once baked, remove the rolls from the oven and brush them with melted butter. Sprinkle finely chopped parsley over the top for garnish.
- Let the rolls cool slightly before serving and enjoy!
Tips & Tricks
- Cook the Filling Ahead of Time: To save time, prepare the sausage filling the day before and store it in the fridge. This allows the flavors to meld even more, plus it makes assembly quicker when you’re ready to bake.
- Use Cold Crescent Dough: Keep the crescent roll dough chilled until you’re ready to assemble the rolls. Warmer dough can become sticky and harder to handle, making it more difficult to roll.
- Drain the Bacon Fat if Needed: While the bacon fat adds great flavor to the sautéed vegetables, too much fat can make the filling greasy. If there’s an excessive amount of fat, feel free to drain some before cooking the onions and celery.
- Don’t Overstuff the Rolls: Be careful not to overfill the crescent rolls with sausage filling. About 2-3 tablespoons per roll is the perfect amount to prevent the filling from spilling out during baking.
- Make It Spicy: For a kick of heat, use spicy pork sausage or add a pinch of crushed red pepper flakes to the filling. This adds an extra layer of flavor for those who enjoy a bit of spice.
- Brush with Butter: Don’t skip the melted butter! Brushing the tops of the crescent rolls with butter as soon as they come out of the oven gives them a beautiful golden color and adds richness to the final dish.
- Try Different Herbs: While parsley and thyme are used in this recipe, you can experiment with other herbs like sage or rosemary to bring out more Thanksgiving stuffing flavors.
- Serve Warm: These rolls are best served warm. If you need to make them ahead, reheat them in the oven at a low temperature for a few minutes before serving to keep them crispy and delicious.
