S’mores No-Bake Cheesecake Recipe

S’mores No-Bake Cheesecake Recipe has a light and creamy cheesecake filling topped with toasted marshmallows, ooey-gooey chocolate, and a graham cracker crust giving you that classic S’mores taste. This smores dessert is all packed into individual mason jars that make it perfect to take to any party or even take to camp this year.

Since I live in New York I’m pretty spoiled with good cheesecakes in my area. We have some of the best Italian Pastry Shops that sell the most amazing creamy, delicious cheesecakes. My Instant Pot NY Cheesecake Recipe is one of my go-to recipes when I have the time to make it at home.

However, when I’m short on time, I make No-Bake Cheesecake. It’s a recipe that I’ve had for years and it’s great when I’m in the mood for a sweet treat. This time I added a twist and made it into a S’mores dessert.

Ingredients for No-Bake Cake

Equipment:

  • Electric mixer or stand mixer

Ingredients:

For the no-bake cheesecake base:

  • 2 ½ cups heavy cream
  • 4 tbsp powdered sugar
  • 4 8oz blocks full fat cream cheese, softened
  • 1 cup granulated sugar
  • ½ cup sour cream
  • 1 tsp vanilla extract

For the graham cracker crust:

  • graham cracker crumbs
  • brown sugar
  • butter, melted

For the S’mores topping:

  • mini marshmallows
  • chocolate sauce, store-bought or homemade
  • graham crackers

How to make Smores No-Bake Cheesecake:

For the cheesecake:

  • Using an electric mixer or stand mixer, whisk together the heavy cream and powdered sugar until stiff peaks form. Set aside.

  • Using an electric mixer or stand mixer, beat the cream cheese and granulated sugar until it is smooth and lump-free.
  • Add the sour cream and vanilla and beat until the mixture is fully incorporated.

  • In a large bowl take half of the whipped cream mixture and fold it into the cream cheese mixture until it is fully incorporated. Take the remaining half of the whipped cream mixture and fold that in as well.

For the graham cracker crust:

  • In a medium bowl, mix together the crushed graham cracker crumbs, brown sugar, and melted butter until it resembles the consistency of wet sand.

To assemble Smores no-bake cheesecakes in mason jars:

  • Take a tbsp of the graham cracker mixture and place it in the bottom of a mason jar.
  • Lightly press so a crust forms.
  • Using a spoon or a piping bag, layer cheesecake mixture onto the graham cracker crust until nearly hitting the top of the mason jar.

  • Add a layer of chocolate sauce, then top with mini marshmallows. 
  • Optional: Using a kitchen torch or broiler, heat up the marshmallows until they’ve browned. This should not take more than 1-2 minutes.  

  • Let set up in the fridge for at least 1 hour.
  • Remove from the fridge and stick a graham cracker into the top and drizzle with more chocolate sauce. Serve chilled.

Chef Tips and Tricks

Assembled cheesecakes can be stored in the fridge for up to 2 days. Cheesecakes can be frozen in a freezer-safe container for up to 3 months. Set on the counter overnight to thaw before serving.

This recipe can easily be halved or doubled to adjust for your serving needs.

You can change out the fruits used to make these mason jar cheesecakes for any season.

Can I use other toppings on my no-bake cheesecake?

Yes, you can top the cheesecake with any of your favorite toppings such as Fruits, Caramel, chocolate chips, peanut butter, and much more.

Why is my no-bake cheesecake not firm?

If your cheesecake is not firm enough you can place it in the freezer for an hour. Doing this should firm up your cake.

  • ¼ cup brown sugar
  • ½ cup butter, melted

  • ¾ cup mini marshmallows
  • ½ cup chocolate sauce, store bought or homemade
  • 24 graham crackers
