Instant Pot Mashed Potatoes and Cheeseburger Meatloaf is an easy one-pot dinner with juicy, cheese-filled meatloaf and creamy mashed potatoes. Both cook together in the pressure cooker, making this a comforting family meal with less cleanup.
I love making this recipe when I’m craving meatloaf but don’t want to spend all evening in the kitchen. The melted cheddar and Pepper Jack cheese make the meatloaf extra delicious, and having the potatoes cook at the same time is such a time-saver.

Why I Love This Recipe
About The Ingredients
- Ground Beef: The base of the cheeseburger meatloaf. I like using lean ground beef.
- Potatoes: Cook right in the Instant Pot alongside the meatloaf.
- Cheddar Cheese: Adds classic cheeseburger flavor.
- Pepper Jack Cheese: Gives the meatloaf a cheesy kick.
- Eggs: Help hold the meatloaf together.
- Breadcrumbs: Keep the meatloaf tender and help it hold its shape.
- Milk: Adds moisture to the meatloaf and makes the mashed potatoes creamy.
- Seasonings: Onion powder, garlic powder, and oregano add flavor.
- Butter: Makes the mashed potatoes rich and creamy.
- Water: Creates the steam needed for pressure cooking.

Make the Meatloaf: Combine the ground beef, eggs, breadcrumbs, milk, seasonings, and cheddar cheese. Shape the mixture around the cheese filling.

Mash and Serve: Remove the meatloaf and check that it reaches 160°F. Mash the potatoes with milk and butter, then serve.
Tips I Found Helpful
- Cut Potatoes Evenly: Dice the potatoes into similar-sized pieces so they cook evenly.
- Seal the Cheese Inside: Pinch the meatloaf edges closed to help keep the melted cheese from leaking out.
- Make a Foil Pan: Use heavy-duty aluminum foil to keep the meatloaf juices separate from the potatoes.
- Check the Temperature: The center of the meatloaf should reach 160°F before serving.
Questions Readers Ask Most
Can I use a different cheese?
Yes! Mozzarella, Monterey Jack, or extra cheddar work well in place of Pepper Jack.
How do I know when the meatloaf is done?
Use a meat thermometer to check that the center reaches 160°F. If needed, cook it a little longer.
How do I store leftovers?
Store the meatloaf and mashed potatoes in airtight containers in the refrigerator for up to 3–4 days. Reheat until heated through.

Thank you for this delicious recipe. I made it tonight and it is a keeper for sure.
Glad you liked it 😉
I made the cheeseburger and mashed potatoes tonight but after 35 minutes the meat wasn’t done – not sure why. We put it on for another 10 minutes on high but still wasn’t done – we ended up microwaving it. Any ideas on why it didn’t get done? Thank you.
wow I have actually made this a few times and never needed more than the 35 minutes 🙁 I am so sorry
This is my first recipe using the instant pot. This may be a dumb question… 35 minutes from the time I put it in the pot or 35 minutes from the time it builds up pressure? The latter, right? Can’t wait to eat it!!
You type in 35 minutes. It’ll build to pressure and then begin the countdown on its own once it reaches full pressure.
Is it really over 1100 cals!
I was going to ask the same thing! Are those numbers based on eating the entire pot’s worth or one serving??
Hi This looks great, but i am confused. In the description it says that the meatloaf is stuffed with the mashed potatoes, but in the directions it says you are cooking the meatloaf on top of the diced potatoes at the same time and then serving mashed potatoes on the side? Am i missing something?
