Do I Have To Use A Cast Iron Skillet 

No, you don’t. If you do not have a cast-iron skillet that is okay, feel free to use an 8×8 pan in replacing. I love the way the cast iron cooks up the cake, but it is not required. 

I know not everyone has a cast iron skillet so no worries if you don’t own one. Just ensure it is an oven-safe pan.

Fresh or Frozen Blueberries 

Either. This recipe can use either fresh or frozen berries. Blueberries are frozen at their prime, so you will find they offer incredible flavor. 

With frozen berries, you will find they will color the coffee cake a blue-ish color. Since they have some liquid around them it does change the color. It will still taste incredible, it just will offer a different look. 

Fresh blueberries won’t bleed out the color and will give you a cleaner look.

Can I Add In Other Fruit 

Absolutely! If you want raspberries or even strawberries added in go for it. I loved mixed berries in the coffee cake as well. Get creative and add in other fruits to add a new layer of flavor if you would prefer. 

How To Store Blueberry Coffee Cake 

Your coffee cake will be best within the first 2-3 days of making it. It will last up to 5-6 days though, but just dry out a bit. 

I make sure that once the coffee cake has fully cooled you cover it. This is going to help prevent your coffee cake from drying out so fast. 

Since it has fruit in it, I store the leftovers in the fridge.

Can You Freeze Leftover Coffee Cake 

Yes, you can freeze this coffee cake once it is done cooking and fully cooled. Place in a freezer container and store for up to three months in the freezer. 

Thaw on the counter for an hour for a quick thaw, or overnight in the fridge. If you want that fresh out of the oven flavor, then toss in the microwave for a quick reheat.

Ingredients

  • For Topping:
  • 1 cup packed brown sugar
  • 2/3 cup flour
  • 1 teaspoon cinnamon 
  • 1/2 cup butter, softened 

For Cake:

  • 2 cups flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 1/2 cup butter, softened 
  • 1/2 cup milk
  • 1 egg
  • 1 teaspoon vanilla extract 
  • 1 cup blueberries (fresh or frozen) 

Instructions

    1. Preheat the oven to 350 degrees. 

    For the topping: combine brown sugar, flour, and cinnamon in a small bowl. Mix then cut in butter. Set aside. Set aside. 

    For Cake:

    1. Combine flour, baking powder, and salt in a medium bowl. Set aside.
    2. Cream together butter and sugar.
    3. Add in egg and vanilla extract.
    4. Alternate between adding flour mixture and milk to the creamed mixture.
    5. When wet and dry ingredients are combined, pour into oiled cast iron pan.
