Instant Pot Italian Mushroom Stew is a popular Upstate New York stew It’s a Utica thing! While there are a few different versions, this is my favorite. A red sauce base, loads of mushroom, meat and more cooked to perfection. 

If you are a fan of mushrooms I think you might really enjoy this stew. This mushroom stew was a staple in almost every household.

What Type of Meat Is In Italian Mushroom Stew

For Italian Mushroom Stew, you can use sausage, or even do a mix of sausage and beef. Depending on how we feel will depend on what I do. We enjoy the mix of meats but feel free to use either of the two types of meat or blend them.

Carrots, garlic, and onions help give this stew incredible flavor. All the mushrooms really soak up the flavor and give this hearty soup recipe it’s a distinct flavor. 

Best Way To Store Mushroom Soup

You will want to store your soup in an airtight container for up to three days in the fridge. You can even do single-serve containers for meal prepping for the week or quick lunches on the go. Instant Pot italian Mushroom Stew

Can I Freeze Italian Mushroom Soup

You can freeze Italian Mushroom Soup. What you need to do is cook as directed and allow to cool down. Then transfer soup into freezer bags or freezer containers. If you do a container leave room for the soup to expand. 

Freeze up to three months. Thaw the soup in the fridge the night before you plan to serve. It will soften the mushrooms a bit more but still taste incredible.

Best Way To Reheat  Soup

Toss in the microwave for a quick reheat. Or opt to warm your soup up on the stovetop low and slow, or toss in the slow cooker. 

This soup tastes amazing and if you love mushrooms it is a nice treat.

What Gives Italian Mushroom Soup It’s Unique Flavor

Most of the time the mushrooms are in a creamy based soup. This Italian Soup uses some wine and is paired with a red sauce. The acidity paired next to the mushrooms works perfectly in the flavor department. 

What do you Serve with Instant Pot Italian Mushroom Stew?

I serve mine over rice or pasta. You do not need to do this but it makes a hearty meal. You can also serve with No-Knead Instant Pot Bread.

Do You Need to Clean Mushrooms Before Cooking

Depending on the variety and way your mushrooms come packaged will depend on if they need to be cleaned. Some mushrooms you can buy cleaned and ready to use. Other styles or brands will leave dirt and such on mushrooms that need to be cleaned. 

How to Clean Mushrooms 

You only want to clean your mushrooms right before you plan to cook with them. If you don’t they will break down and rot really fast. 

To clean mushrooms you want to rinse them in water washing off any dirt and debris. Then once fully cleaned, layout on a paper towel or clean cloth. 

Pat dry and begin chopping or using the mushroom as you planned.

Instant Pot Italian Mushroom Stew is a popular Upstate New York stew! While there are a few different versions, this is my favorite.

Ingredients

  • 1 tbs olive oil 
  • 3 cloves chopped garlic
  • 1 chopped onioin
  • 1 pound bulk hot sausage
  • 1 Chopped Pepper
  • 1 cup red cooking wine
  • 1 cup water
  • 24 oz can diced tomatoes
  • 24 oz can crushed tomatoes
  • 32oz  whole mushrooms 
  • 2 tbs Italian seasonings
  • 2 bay leaves

Instructions

  1. Place Instant pot on saute.
  2. Add olive oil.
  3. Add garlic and onion, cook for 1-2 minutes.
  4. Add bulk sausage.
  5. Cook until brown and crumbled.
  6. Add Wine and water.
  7. Add chopped Pepper.
  8. Add crushed and diced tomatoes.
  9. Add Mushrooms and seasonings.
  10. Do not stir.
  11. Cook on manual high pressure for 4 minutes.
  12. Do a quick release.
  13. Serve over rice or alone.
