If you have leftovers simply cover the casserole pan with aluminum foil or a lid and place in the fridge. Or transfer to airtight container and toss in the fridge. These will last 2-3 days in the fridge.

Ingredients

  • 4 large zucchini
  • 1 pound ground turkey
  • 1 cup corn
  • 1 cup black beans
  • taco seasoning

Instructions

  1. Cut zucchini length wise and scoop out inside.
  2. Preheat oven to 350.
  3. Cook ground turkey until brown and crumbled.
  4. Add 2/3 cup water, taco seasonings, corn, black beans.
  5. Stir together and scoop into zucchini boats.
  6. Bake on 350 for 15 minutes.
  7. Remove and top with your favorite toppings.
