We have had tons of zucchini this year in our house. So I am always looking for new and tasty ways to whip up a dish. Today we were craving quiche so I threw this together.

What Is Quiche

Quiche is a classic French dish that has been around for so many years. A pastry pie crust that is filled with a creamy egg, cream, and your favorite filling ingredients. All mixed up and baked in the oven.

You will find tons of quiche recipes all over the globe. I wanted to create a fun and easy meatless quiche featuring summer produce.

How To Make

Step 1: Use a mandoline and thinly slice your zucchini. Then you will season your zucchini and saute on the stove to help soften up the zucchini.

Step 2: Then you will start to assemble your quiche I used a store bought crust. You are welcome to make a homemade pie crust if you would like.

Add seasonings and salt and pepper to taste and pour into your pie plate.

Step 3: Bake until your zucchini quiche is fully cooked, and then allow to cool on a cooling rack for a few minutes.

Can I Use This Recipe To Make A Crustless Zucchini Quiche

Not a fan of crust? You can absolutely make this into a crustless quiche. Just grab a pie plate or baking dish and spray with cooking spray.

Then pour the quiche filling in and bake as you normally would. Then slice and serve. I love the crust paired with the zucchini but go right ahead and do crustless if you want a gluten free dish.

Could I Use Summer Squash In Replace of Zucchini

If you want a squash quiche you would do the same method just reach for yellow squash. Instead of adding zucchini, you would add squash.

The egg mixture will work perfectly to add zucchini or squash or if you feel lucky do a mix of the two summer squashes.

Variations To Quiche Recipe

  • Use grated zucchini instead of slices.
  • Swap out the cheese for something different like mozzarella, pepper jack, etc
  • Add in other vegetables like sauteed peppers, onions, etc
  • Skip the crust
  • Etc

Ingredients

  • 1 large sliced zucchini
  • 1 tsp garlic powder 
  • 2 tbs butter
  • 1 Pie Shell
  • 5 eggs
  • 1/2 cup heavy cream 
  • 8 oz cheddar cheese
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Slice your zucchini in very thin slices
  2. melt butter in a frying pan add garlic powder and zucchini slices. Saute Zucchini
  3. Saute for 2-3 minutes until slightly softened.
  4. In a large mixing bowl add eggs, heavy cream, parmesan cheese, cheddar cheese.
  5. Blend well about 1-2 minutes.
  6. Preheat oven to 350
  7. Now spread a layer of cheese on the bottom of the shellZucchini Quiche cheese
  8. Now a layer of zucchiniZucchini Slices in pan
  9. Next, pour over the egg mixture.Egg Mixture for Quiche Pour over zucchini
  10. Bake on 350 for 30-40 minutes or until a toothpick comes out of the center clean.
