What I love about this recipe is it takes minutes to prep. Especially if you own a mandoline slicer.
Just wash and cut off ends of zucchini, then slice away. You get evenly cut sliced that will bake up perfectly.

- 1 large zucchini
- 2 tablespoon butter melted
- 1 tsp garlic powder
- 1 tsp chopped parsley
- 4 oz shredded parmesan cheese
Instructions
- Pre-heat oven to 350
- Slice Zucchini using a Mandoline Slicer or in thin even slices
- Melt butter and stir in garlic and parsley
- lay in a single layer on a baking sheet
- Top with shredded parmesan cheese
- bake for about 7 minutes
- Turn on your broiler and broil for 2-3 minutes or until cheese is melted and golden brown.

I’m a little confused – I don’t see when/where you put the melted butter with garlic and parsley. Do you put the zukes in and coat them, or spread it on slices on the baking sheet? Thanks for the clarification.
