What do I need to get started?
- Spaghetti squash – 2-pound squash is great
- Chicken breast – I prefer to use rotisserie chicken, but you can cook and chop chicken breast
- Garlic – pre-minced or fresh
- Celery – great flavor for this recipe
- Chives – you can use onion if you prefer
- Salt and pepper
- Cream cheese – I prefer regular but reduced-fat will work
- Red pepper – any pepper is fine
- Buffalo sauce – I like Franks, but any is fine
- Ranch dressing – your favorite brand
- Blue cheese – this is optional
- Air Fryer – you can cook the spaghetti squash in the oven if you want
- Large mixing bowl
- 2-quart casserole dish, optional
Ingredients for Spaghetti Squash

- 1 teaspoon pepper
- 1 teaspoon salt
- 1 medium (approx 2 pounds) spaghetti squash, halved and deseeded
- 1 8 ounce package cream cheese, room temp
- ½ cup buffalo sauce, Franks or other
- 1 teaspoon garlic, minced
- 2 stalks celery, diced
- ½ cup red pepper, diced
- 1 Tablespoon chives, chopped
- 1 pound chicken breast, cooked and shredded, or 2 cups shredded rotisserie chicken
- ½ cup ranch dressing
- ¼ cup blue cheese, optional
How to Make Air Fryer Buffalo Chicken Spaghetti Squash
- Sprinkle pepper and salt over the spaghetti squash and spray with nonstick cooking spray or olive oil. Place in the air fryer basket.
- Place the air fryer basket in the air fryer and set temperature at 365° for 30 minutes. Spaghetti squash should be fork tender.
- In a large mixing bowl, combine the cream cheese and buffalo sauce and mix to combine well.
- Add the garlic, celery, red pepper and chives and mix to combine.
- Using a fork, rake out the spaghetti squash into the sauce, add the chicken and combine.
- Pour the mixture back into the spaghetti squash shells or into a casserole dish.
- Place in the air fryer for an additional 5 minutes at 365°. Remove and place on a serving platter.
- Drizzle with ranch dressing and sprinkle with blue cheese if you want.
