Summer is by far my favorite time of year. There is something about sitting on the porch with friends and family laughing and talking. I find myself making more salads this time of year which I love!

I of course love making this easy Caprese salad with ripe tomatoes and basil from the garden. There is something about picking fresh herbs and veggies and then heading into the kitchen and cooking with them! 

You will love how quickly this Caprese salad comes together and the flavors of the dressing will literally wow you. This salad is so simple that you might just find yourself making it every day for lunch to enjoy on the porch as well!

How to make Caprese Salad with Homemade Dressing

  • Mix together extra virgin olive oil and balsamic vinegar, and spices,
  • Chop fresh basil leaves
  • Add fresh mozzarella balls and cherry tomatoes

  • Salt and Pepper to taste

Tips Tricks and FAQs

  • You can use any variety of fresh tomatoes for this salad. Choose ones that are fragrant without wrinkled skins. This means they are ripe and bursting with flavor. I love using cherry tomatoes because they are bite-size and always so flavorful. 
  • I love using fresh mozzarella cheese. You can use any type of fresh mozzarella for this recipe.
  • If you want to feel like you are in Italy, rip the basil rather than cut it. Rumor has it that it contains more flavor when it is ripped.

Storage

You want to enjoy this salad right away. Once you cut the basil and add the dressing it will not store well. Thankfully this salad is easy enough to make in just a few minutes.

Ingredients

  • 8 oz Fresh mozzarella cheese balls
  • 8 oz Cherry Tomatoes
  • 4 fresh basil leaves

Dressing

  • 1/2 cup olive oil
  • 2 tbsp balsamic vinegar
  • 2 tbsp romano cheese
  • 1 tsp garlic powder
  • salt and pepper to taste

Instructions

  1. Mix together cherry tomatoes, fresh mozzarella cheese, and basil leaves.
  2. For Dressing
  3. Mix olive oil, balsamic vinegar, seasonings, and parmesan cheese.
  4. Pour dressing over salad and serve
