Instant Pot Chicken and Wild Rice
This chicken and wild rice Instant Pot recipe is a protein and a fiber-packed dish that is a total comfort food.
Ingredients
- 1 tbs olive oil
- 4 cloves garlic
- 1 small onion
- 1 pound Chicken Breast
- 1 tbsp Italian Seasonings
- 2 cups wild rice
- 4 cups chicken broth
- Salt
- Pepper
- 16 oz cannellini beans
Instructions
- Place Pot on saute
- Add Olive Oil, Onion, garlic and cook till tender about 1-2 minutes
- Add Chicken and brown outside about 2-3 minutes
- Add Seasonings, Rice, Beans, and Broth
- Place Pot on Manual (or pressure cook) LOW PRESSURE Or use your Rice button for 12 minutes.
- Do A Quick Release

Is the chicken cut up before or after cooking?
Oddly enough (this has never happened to me before with other wild rice recipes), the wild rice did not cook as it should have. Had to add another 12″. I love your recipes so will just remember to adjust this one.

I am new to the instant pot. I tried this recipe today since I had the beans, wild rice and frozen chicken available.
It worked well but a little bland for my taste. So I added some red bell pepper, mushrooms and a few chopped pecans after it cooked. I am so glad the machine has the warm function. My husband didn’t come in from outside til 50 mins later!
The picture shows some wild rice, but most of it looks to be a white rice, so maybe it’s a rice mix? I have a bag of Minnesota wild rice and it is all long and dark and takes twice as long to cook I. The instant pot as what is shown in the instructions above. Can you clarify please?
OMG this was such a hit with even my super picky child! I did substitute chicken broth with Mushroom Better than bouillon paste (thus also skipped the salt and pepper), and used frozen chicken breast. Since I had frozen chicken, I cooked it for 16 minutes on low pressure, and it was perfect! It created a bit of a broth I poured over it all. I went from frozen chicken, dry wild rice, and a can of beans to a delicious, kid and adult approved meal in about 30 minutes!!
