Strawberry Icebox Cake
Strawberry Icebox Cake is an easy no-bake cake made with homemade whipped cream, and fresh strawberries all layered with graham crackers. This strawberry dessert tastes like a fresh cheesecake without all the work.

- Strawberries that are Fresh, not frozen.
- Heavy Cream
- Vanilla extract
- Powdered Sugar
- Graham Crackers
Step by Step Directions for No-Bake Strawberry Icebox Cake
Step 1
Make the homemade whipped cream mixture.
In a medium-sized bowl, add the heavy cream.
Step 2
Add Powdered Sugar and Vanilla to the heavy cream. Whip the heavy cream in a stand mixer or hand mixer
Step 3
Continue blending for 3-4 minutes or until a stiff peak forms.
Step 4
Spread a thin layer of the whipped cream to the bottom of a 9×9 baking pan. This helps the graham crackers stick to the bottom of the pan.
Step 5
Begin layering the Cake.
Place a layer of graham crackers on the bottom; you may have to break some graham crackers into pieces to fit.
Then Add a ⅓ of the whipped cream on top and spread evenly using an offset spatula.
Step 6
Top that with a ⅓ of the sliced strawberries. Place another layer of graham cracker, spread another ⅓ of the whipped cream, and place another ⅓ of the strawberries.
Step 7
Repeat the layer one more time, ending with strawberries on the top. (Place sliced strawberries on top or chopped strawberries, sprinkle with crushed graham cracker if desired)
Cover the baking dish with plastic wrap and place in the refrigerator for at least 4 hours, but 24 hours is best. Slice into nine pieces, and Enjoy!
