January is National Soup Month. I feel it is my duty as an instant potter to make as many soups as I can:). It is cold and raining here in NY Yes rain in January that is very rare we usually only get snow at this time of the year. So a warm bowl of Zuppa Toscana Olive Garden Copycat Instant Pot Soup just hit the spot. You also need to try my Panera’s Broccoli and Cheddar Soup.
Let me tell you this Instant Pot Soup was super easy to make. Instant Pot soups are quick and easy to make and will fill any belly. This was actually my first time using Kale in a recipe I could not believe how good it was. The mix of Italian Sausage with the potatoes and cream is the perfect meal on any cold day. I love instant pot soups that are more like a meal like my Instant Pot Ultimate Loaded Corn Chowder,
You will need:
1 small chopped onion
1 TBSP olive oil
3 cloves garlic
2 cups chopped Kale
2 cups diced Potatoes ( I used a bag of frozen diced Hashbrown potatoes)
32oz low sodium chicken broth
1 pound hot Italian sausage
6 slices cooked bacon
1 cup milk or cream
Directions: Place you Pot on saute add olive oil and onions, garlic, and sausage. Brown sausage until it crumbles. Add potatoes, chicken broth, and place Kale on top. Cover and place pot on manual high pressure for 15 minutes. Do a quick release. Placepot back on saute. Stir in milk or cream. Chop your bacon and stir in your soup. Enjoy with a hearty Italian bread.
Zuppa Toscana Olive Garden Copycat Instant Pot Soup
- 1 small chopped onion
