These are amazing & reheat great at work 4 lunches!!!! Thanks!
Well, I was skeptical, but these were truly delicious! I fudged,a LOT, due to what I had on hand and my gluten intolerance so that is what really made me skeptical. I also thought the teaspoon each of garlic powder and onion powder would be crazy but, I guess because ground chicken is bland, it was fine. I would maybe cut back the pepper to 1/2 or 3/4 tsp if you don’t like pepper that much. If you do, I would probably swap out a little of it for a dash of cayenne. So, my swaps were…I didn’t have GF bread crumbs so I threw in some corn flour (didn’t even have corn meal so I was worried) but that part was fine. They still came out ‘frittery’. I didn’t have green onion so I just chopped up a small onion and put it in there. And for the cheese, I used some shredded mexican blend I had with some grated parmesan. I worried that the 10 minutes at 350 wouldn’t be enough because they were pretty thick (by now you’ve figured out I overthink everything, lol). But, that was fine, too. These were great and so easy. I would make again and again. I LOVE that they were so versatile. Thanks for a great recipe! PS- I was only going to eat half of one because I am actually having pizza later, and made this just because the ground chicken was going to be past date if I didn’t, but I ended up going back, and back again, and ate 1 and a 1/4. So good!
