What do I need to get started?

  • Chicken breasts – you can get these already flattened, or you can cut them down the side almost completely through, but not quite. butterflying the chicken,
  • Then lay them open, place a piece of parchment paper over them and pound them about a ¼ inch thick.
  • Mozzarella cheese – or you can use  Colby jack or any you prefer 
  • Corn – the whole kernel either frozen, canned, or fresh
  • Green chilis – canned, chopped 
  • Mexican cheese – this is a good cheese blend, but any is fine
  • Cilantro
  • Salt 
  • Pepper 
  • Flour – all-purpose
  • Eggs
  • Breadcrumbs – plain or seasoned

How to Make Air Fryer Stuffed Chicken Rolls

  1. Preheat the air fryer to 375° for 5 minutes.
  2. Layout a piece of flattened chicken and layout 2-4 mozzarella cheese slices over the chicken.
  3. In a large mixing bowl, add the cream cheese, corn, garlic, green chilis, and Mexican cheese. 
  4. Beat with a hand mixer until well combined. 
  5. Spread a couple of spoons of the cream cheese mixture over the sliced cheese.
  6. Starting on one end, roll up the chicken as tight as you can without squishing out the filling. 
  7. Use toothpicks to close the chicken.
  8. In a large shallow dish, combine the salt, pepper, and flour.
  9. In a separate dish, add the beaten eggs
  10. In a third small bowl, add the breadcrumbs.
  11. Roll one chicken roll in the flour mixture, then roll in the eggs, and lastly in the bread crumbs.
  12. Place the breaded rolls in the air fryer, making sure the rolls are not packed too closely together. You may need to do a second batch.
  13. Spray the rolls with nonstick cooking spray or olive oil, then place the air fryer basket back into the air fryer and set it at 375° for 10 minutes. 
  14. Flip the rolls over and spray with the nonstick cooking spray.  Return to the air fryer and cook for another 15 – 20 minutes.
  15. Use a meat thermometer to check for doneness.  The temperature should reach 165° when the chicken is probed in the middle of the roll.
  16. Remove and serve immediately with your favorite side dish. 
  17. Remember to remove the toothpicks before serving.

Tips Tricks and FAQs

  • Be sure that you check your chicken with a thermometer to make sure it is cooked to at least 165 degrees in the center before serving. Thicker pieces of chicken may take longer. 
  • I love the combination of cheese in this recipe, but you can alternate between different flavors that you love. A good option is adding Colby Jack. 
  • You can often buy chicken breast that is made into filets at a store at the meat counter.  Or, you can cut the breast open horizontally, making sure not to cut completely through. Then place a piece of parchment paper over them and pound them out to a ¼ inch thick.
  • If you prefer, you can fry these in oil, or bake them in a 350° oven for 25 minutes.

How to Store Air Fryer Stuffed Chicken

Store your leftovers in an airtight container in the refrigerator for up to 5 days.

How long do chicken breasts take in the air fryer?

When cooking chicken breast in the air fryer that is not stuffed it will take about 18 to 20 minutes to cook. You will want to cook it for 10 minutes and then flip it and cook it for another 8 minutes and then check it. Continue cooking it until it reaches an internal temperature of 165 degrees.

How do you cook real stuffed chicken in an air fryer?

You will want to cook your stuffed chicken in the air fryer for 25-30 minutes. Don’t forget to flip it halfway through cooking. Check the internal temperature to ensure it reaches 165 degrees in the center. Be sure to test the chicken and not the filling of the chicken.

  • 4 large chicken breasts, cut 3/4 way through horizontally, then pounded flat into large pieces
  • 16 slices mozzarella cheese
  • 1 cup canned corn, drained
  • 1 (8 Ounce) package cream cheese
  • 1 tablespoon minced garlic
  • 1 (4 ounces) can green chilis
  • 1 cup Mexican cheese blend, shredded
  • 1/4 cup cilantro, chopped
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 cup all-purpose flour
  • 2 eggs, well beaten
  • 2 cups breadcrumbs
