It has already snowed here in central NY one day it was 62 the next we had a snowstorm. I am certain this year will lead to lots of snow and cold winter days.  That means lots of soups, stews, and casserole’s in my Instant pot.

Thanksgiving is over and I wanted to try out Instant Pot Cheeseburger soup. I never made this soup before so it was a risk but I keep seeing it on Pinterest and had to give it a shot in the Instant Pot. Check out my 20 must-have Instant Pot Recipes.

I skipped a good amount of prep by reaching for frozen hashbrowns as the base. It will save you time and just simplify the process of the soup. A creamy broth, ground beef, potatoes, and of course cheesy goodness in every single bite. 

Can I Make This Cheeseburger Soup with Ground Turkey in Replace of Beef 

Sure. You can use any meat that you can ground up. Turkey, chicken, pork or even venison. Just make sure that you cook the meat all the way through and ground it up like you would ground beef. If it is extra fatty, drain the fat before or it will make the soup extra greasy.

Can I Use Diced Potatoes Instead of Hashbrowns 

Of course. If you want to feel free to peel and dice up your own potatoes or even shred to toss in and cook. For my meal prepping for freezer meals, I found that frozen hash browns work fantastic and save you time during the prep. But if you want fresh go for it. 

Do You Quick Release Cheeseburger Soup

Yes. After you have cooked your soup and the timer goes off on the Instant Pot. You will then do a quick release of the pressure. Your soup will be super hot, and ready for you to mix in your heavy cream and cheese, then serve. 

What To Serve With Instant Pot Cheeseburger Soup 

We call this a meal in one type of soup. I have also paired it with a few other sides on occasions that I can share below. But if you want to eat the soup alone, go for it. This easy cheeseburger soup is hearty and filling. 

  • Salad
  • Half of a sandwich
  • Dinner Rolls or Instant Pot Bread
  • Fresh veggies and dip on the side
  • Crackers

What Type of Toppings Go With Cheeseburger Soup 

I love adding all things to do with a cheeseburger, and of course out of the box toppings. Serve it plain or dress it up. If you are having guests over, maybe do a soup bar. Load all the fixing in bowls and set it out and let them create their own bowl of soup. 

  • Green onions
  • Regular onions diced
  • Shredded Cheese
  • Diced pickles
  • Splash of hot sauce for heat
  • Chopped Tomatoes

Add whatever toppings you want. This is a versatile soup that will pair with tons of flavors. So have fun and get creative.

How to Store Leftover Pressure Cooker Cheeseburger Soup 

Allow the soup to cool and then transfer into airtight containers and tuck in the fridge. You can do one large container or if you are like me, prep them for weeknight meals or lunches. I use single-serve containers and then toss in lunch pails and head out the door for an easy reheatable lunch!

Total Time: 10 minutes

Ingredients

  • 2 Pounds Ground Beef
  • 1 onion
  • 1 cup shredded carrots
  • 2 stalks celery chopped
  • 2 cups cubed potatoes
  • 6 cups beef broth
  • 1 tbs Worcestershire
  • 1 tbs garlic powder
  • 16 oz Velveeta cheese or cheddar cheese
  • 2 tbs corn starch 

Instructions

  1. Place your Instant pot on saute.
  2. Cook ground beef until brown and crumbled
  3. Add Onions, carrots, seasonings, and Potatoes
  4. Add Beef Broth
  5. Stir
  6. Place on Manual High pressure for 5 minutes
  7. Do a quick release
  8. Place pot back on saute
  9. Add in corn starch slurry ( 2 tbsp corn starch mixed with 2 tbsp water)
  10. Continue cooking 1-2 minutes or until bubbly
  11. Stir in cheese

Notes

Serve with crusty bread and top with tomatoes

One of the Things I Love About Soups is that You Can Use a Lot of Leftovers to Make Soup!   3. I used 2 1/2 cups chicken broth because it’s what I had on hand. I added salt, pepper and more onion. Turned out great!

  4. I was in the middle of making this and realized it does not say how much chicken broth we need. How much do you use? I will have to just estimate tonight but wanted to find out what you use.

  5. I’m making this soup now and realized the amount is not specified. So I read the comments to see that there are comments about that from almost a year ago. I wish I would have known before making the soup.
