Instant Pot Scalloped Potatoes with Ham and Asparagus

With Easter right around the corner, I wanted to try out a few of my favorite dishes in the Instant Pot. Yesterday I made a Honey Ham. Today I made Scalloped with Ham and Asparagus. This can be made as a full one-pot meal or just as a side dish. Creamy and Cheesy the perfect way to use up your leftover ham.

You will need:

2 tbs olive oil

2 tbs butter

1 cup milk

2 tbs flour

5 russet potatoes thinly sliced

1 cup water

1 onion chopped

5-6 slices of ham cut up

16 oz shredded cheddar

Directions: Place Pot on Saute. Add olive oil and onion. Let saute 2-3 minutes Add ham and water. Place cut up potatoes in your Steamer basket on top of the ham and onions. 1 8 oz package of frozen cut up Asparagus right on top of your potatoes. Place your pot on manual high pressure for 12 minutes. Do a quick release. Remove potatoes and asparagus. Place them in a buttered baking pan. Place your pot back on saute. Remove ham. Add butter and flour Whisk until bubbly Add in milk and keep on saute 1-2 minutes until thickens. Stir in cheese until melted. Pour over your potato mixture. Place in the broiler for 2-3 minutes until the top is slightly brown.

Total Time: 25 minutes

  12. Add butter and flour Whisk until bubbly Add in milk and keep on saute 1-2 minutes until thickens. Stir in cheese until melted.
  13. Pour over your potato mixture.
  14. Place in the broiler for 2-3 minutes until the top is slightly brown.

  1. This looks really good and I have all the ingredients on hand except I have fresh asparagus, not frozen. Would the cook time be the same? Thanks!

  2. So, there seem to be some missing instructions. Mine turned out a soupy mess even though I followed directions exactly. I think you must need to take the water out with the ham even though it doesn’t say to. Please advise on correct preparation.

  4. I did drain the excess water from the pot and my sauce came out lovely and gooey. I will knock this recipe for a lack of seasoning. I added garlic powder and a small amount of salt to the top of the potatoes. I also added hot sauce to the cheese sauce to provide some zing to what would have been a very bland sauce. I did like the texture of the potatoes and my ham steak was nicely cooked. It was a nice hearty meal on a cold winter night.

  6. This meal was great tasting. We did drain the water after cooking the ham. And it helped for the sauce to be thick.
    Recipe does not say what to do with ham once you take it out of instant pot. We topped the potatoes with it.

    I even went for seconds.

  7. One of my favorites from you! The first time, I followed the directions exactly. However, I am of Italian ancestry, so I added 1/2 tsp each of garlic powder & ground thyme & onion powder to the sauce… adds a little character to the sauce! Also, I cheat on making this recipe. I make the cheese sauce while the casserole is in the Instant Pot. I use the stovetop, but I could use my mini IP.

  8. Is your time right for cooking…12 minutes??? I usually do mashed at 4 minutes…. Just checking!

  9. Have you tried making this and using the Air Crisper Lid to brown the top? Seems a little easier than putting it in a baking dish in the oven. Still, a baking dish would mean more brown crunchy stuff!

  10. I’ve been making this recipe for years. It is my all time favorite, dangerously so in fact. You need a tasty ham to start- it makes all the difference in flavor of the sauce. If you’re in Canada I recommend sobeys prepared hams for this it is DELICIOUS on a cold winter day. I usually substitute the asparagus for broccoli because that’s what we keep on hand. 100 stars.
