Instant Pot Scalloped Potatoes with Ham and Asparagus
With Easter right around the corner, I wanted to try out a few of my favorite dishes in the Instant Pot. Yesterday I made a Honey Ham. Today I made Scalloped with Ham and Asparagus. This can be made as a full one-pot meal or just as a side dish. Creamy and Cheesy the perfect way to use up your leftover ham.
You will need:
2 tbs olive oil
2 tbs butter
1 cup milk
2 tbs flour
5 russet potatoes thinly sliced
1 cup water
1 onion chopped
5-6 slices of ham cut up
16 oz shredded cheddar
Directions: Place Pot on Saute. Add olive oil and onion. Let saute 2-3 minutes Add ham and water. Place cut up potatoes in your Steamer basket on top of the ham and onions. 1 8 oz package of frozen cut up Asparagus right on top of your potatoes. Place your pot on manual high pressure for 12 minutes. Do a quick release. Remove potatoes and asparagus. Place them in a buttered baking pan. Place your pot back on saute. Remove ham. Add butter and flour Whisk until bubbly Add in milk and keep on saute 1-2 minutes until thickens. Stir in cheese until melted. Pour over your potato mixture. Place in the broiler for 2-3 minutes until the top is slightly brown.

Have you tried making this and using the Air Crisper Lid to brown the top? Seems a little easier than putting it in a baking dish in the oven. Still, a baking dish would mean more brown crunchy stuff!

One of my favorites from you! The first time, I followed the directions exactly. However, I am of Italian ancestry, so I added 1/2 tsp each of garlic powder & ground thyme & onion powder to the sauce... adds a little character to the sauce! Also, I cheat on making this recipe. I make the cheese sauce while the casserole is in the Instant Pot. I use the stovetop, but I could use my mini IP.

I liked the thyme, but my husband did not. Either way, I think it altered (rather than enhanced) the recipe.
