This American Spanish Rice is a quick and easy dish to make on a busy night and serve up to your family. Serve with a crisp green salad, yeast dinner rolls, and dinner is ready in 12 minutes. The Instant Pot will cook your rice perfectly, and help infuses the flavors together, so each bite is rich in flavor. Why is this called American Spanish rice? Because, I know this is not authentic Spanish rice, and I don’t claim that it is. This is the rice we grew up eating that I now make for my family. It is a twist on the traditional Spanish rice that is quick and easy to make.
My mom would make this with tomato sauce as the base, and it was always delicious. One day when we were low on food, and I was not in the mood to go to the store I raided my pantry and fridge for something to make. I found almost all the ingredients I needed for my mom’s Spanish rice. I told myself to get creative so I grabbed a few ingredients like spaghetti sauce to replace the tomato sauce and a few different ingredients. As I cooked it, I hoped it would turn out, so I had an excellent meal to serve the family.
To my amazement, the dish turned out great, and now I make it this way each time. The spaghetti sauce adds a ton of flavors compared to just tomato sauce. You can use any brand of your favorite spaghetti sauce.
Also, I have used ground beef in the past with this recipe, and it works great, this go-around I used ground turkey. I don’t notice much difference between the two types of meat. If you have a preference for ground meat, just use what your family likes.
It is official I am addicted to my Instant Pot. I have made this rice dish before at home. It never really turns outright. I don’t know how the instant pot does it but this dish was Amazing. The best part of all it was so easy to do.
You will need:
1 Jar Spaghetti Sauce 28oz
1 pound ground turkey or beef ( I used ground turkey)
1 clove garlic
1tbs chili powder
2 cups rice
2 cups water
Directions: Put your instant pot on Saute. Saute chopped onions, garlic, and peppers. Place your ground turkey in the pot and brown your meat. Place your jar of sauce in the pot and add in 2 cups of water stir it up a little. Add in 2 cups of Rice. Place the Instant Pot on 12 minutes high pressure. Do a quick release.
Garnish with cheddar cheese and green onions Optional.
