Ninja Foodi

Why I Love This Recipe:

  • Made in the Ninja Foodi: The Air Crisp function cooks the casserole without heating up the oven.
  • Creamy and cheesy: Every bite is packed with hash browns and plenty of melted cheese.
  • Easy shortcut: Frozen hash browns keep the prep simple.
  • Great for breakfast or dinner: Serve it with breakfast favorites or as a cheesy side dish with dinner.

Ingredient Notes

  1. Onion: A small chopped onion adds savory flavor throughout the casserole. Chop it fairly fine so it blends into the hash browns as they cook.
  2. Frozen Hash Browns: Use a 30-ounce bag of frozen shredded hash browns. No need to make this complicated with fresh potatoes.
  3. Cheddar Cheese Soup: Gives the casserole extra cheddar flavor while helping create the creamy sauce.
  4. Cream of Chicken Soup: Adds richness and helps bind the hash browns together. Use one 10-ounce can.
  5. Cheddar Cheese: Shredded cheddar adds even more cheesy flavor and creates that melty cheese topping. Shredding your own cheese will give you the smoothest melt.
  6. Sour Cream: Makes the casserole rich and creamy and balances the condensed soups and cheese.

Tips I Found Helpful

  • Keep the hash browns frozen: There’s no need to thaw them before mixing them into the casserole.
  • Coat the potatoes well: Stir until all of the hash browns are evenly covered with the creamy soup mixture.
  • Spread it evenly: Press the mixture into an even layer in the Ninja Foodi pot so it cooks at the same rate throughout.
  • Shred your own cheese: Freshly shredded cheddar melts smoother than bagged pre-shredded cheese.
  • Watch the top: Ninja Foodi models can cook differently, so start checking near the end and remove the casserole when the top is golden and the center is hot.
  • Let it rest before serving: Give the casserole about 5 minutes after cooking so it can set slightly and is easier to scoop. 💙
