What Veggies Are In Instant Pot Duo Crisp Chicken Pot Pie
This is totally up to you. You could reach for a bag of frozen mixed veggies to stir in, or chop up some fresh carrots, peas, and such and mix in. You are in control, so if you don’t like a vegetable leave it out.
What Is Instant Pot Duo Crisp Chicken Pot Pie Crust Made From
I used a pie crust to top the filling in this recipe. You can use a store-bought crust you roll out and cut and shape, or make a homemade pie crust. Either way, it is up to you. I find store-bought you roll out works fantastic for a recipe and helps shave off time spent in the kitchen.

Of course. This recipe does freeze well. You can assemble and freeze before you cook, or cook and freeze leftovers. Either method will work in the freezing process. Just store in an airtight container or sealable bag and then freeze for up to three months.

How Do I Thicken My Pot Pie Filling
If you feel you want a creamier base you can easily thicken it. Just take a tablespoon of cornstarch mixed with 1/8 cup cold water. Make a slurry and stir into the hot filling and saute for 2-3 minutes. As that mixture is hot it will begin to thicken. Repeat till you get the thickness you desire.

Ingredients
- 2 tbs olive oil
- 1 pound chicken breast cubed
- 1 tbs garlic powder
- 1 tsp thyme
- 1/2 tsp pepper
- 1 cup chicken broth
- 12 oz bag frozen mixed vegetables
- 4 large Potatoes cubed into 1" pieces
- 10 oz can cream of chicken soup
- 1 cup Heavy Cream
- 1 Pie Crust
- 1 egg
- 1 tbs water
Instructions
- Place on Saute, cube chicken into 1" pieces.
- Add olive oil and chicken.
- Cook on saute until the chicken is white for about 5 minutes.
- Add seasonings.
- Add chicken broth.
- Add all veggies.
- Add the Cream of Chicken Soup.
- Do not stir.
- Place Pressure cooker lid on.
- Cook on manual high pressure for 10 minutes.
- Do a Quick Release.
- Place back on Saute.
- Stir and add Heavy Cream continue cooking for 2-3 minutes or until thick.
- Lay the pie crust over the top.
- Whisk egg with water and brush over the top of the crust.
- Place your Air Fryer lid on.
- Cook for 10 minutes on air crisp.
- Remove air crisp lid and serve.

You can also do this in the instant pot and remove and place in a baking pan with the pie crust
Bake for 20 minutes on 375 in the oven

@Lisa, to brush on top of the crust before you use the air fryer.
@Lisa, it’s for the egg wash she forgot to put in the recipe. Mix the water and the egg white and brush over the pie crust 🙂
It turned out good. My crust shell was broken so the juices bubbled up & over the crust preventing the middle to brown up. I had to scoop the dough out before serving. Note to self don’t use a broken crust.
How can I do this with crust on bottom and top?
Easy and delicious! The egg and water are for egg wash on top of crust before crisping. I’m making this often, just adding more chicken@
