Instant Pot Olive Garden Copy Cat Chicken Scampi
This instant pot chicken scampi is so creamy and savory, you might just attempt to lick your plate to get all the creamy goodness.
Ingredients
- 1 pound chicken breast, Cubed
- 3 Peppers, sliced I used one yellow, green, and a Red pepper.
- 1 onion, chopped
- 1 tbsp italian seasonings
- 6 cloves garlic, chopped
- 1 cup heavy cream
- 1 cup White Wine
- 1 tbs olive oil
- 16 oz pasta
- 3 cups water
Instructions
- Turn pot on saute
- Add Oil, garlic, and onion, saute for 1 minute
- Add cubed chicken and saute until outside is all white about 2-3 minutes
- Add White Wine and seasonings
- Add pasta and water just enough water to nearly cover your pasta
- 4 minutes high pressure
- Quick Release
- Placepot back on saute and stir in heavy cream
- allow thickening, about 1-2 minutes
- Garnish with Romano cheese
- Enjoy!

I added the peppers right before the pasta. Turned out great! My family said it tastes just like Olive Gardens.
