I live in the Syracuse area and I grew up eating salt potatoes. I didn’t realize until recently not everyone knows, or has tried this incredible potato recipe. If you have yet to try Syracuse Salt Potatoes, this recipe needs to be made soon.

Salt Potatoes or Syracuse potatoes offer incredible flavor. Because they are boiled in a ton of salt, they have such a creamy texture to them. Then you drizzle over butter and it offers the perfect amount of flavor to these buttery, creamy, and velvety potatoes.

Where Did Salt Potatoes Originate 

It is said that salt potatoes came about all the way back in the 1800’s! It is said that salt miners in the area would make these Syracuse potatoes for lunch. They would toss potatoes in a basket and lower them into the kettles of the boiling brine. They would then top the perfectly cooked potatoes with a slab of butter and dive in.

Now because of how popular this potato recipe has become, you can now find grocery stores in the area sell bags of Salt Potatoes ready to cook. It comes with potatoes and a bag of salt. Then you dump and cook. This is generally only found in the New York area.  

What Potatoes Do You Use for Salt Potatoes 

You use small potatoes. The ones that are yellow or white. You don’t cut them up, you cook these potatoes whole. Trust me they are absolutely incredible and you will never want to make potatoes any other way. Do not use Red Potatoes or colored the skins are not thick enough.

Do Salt Potatoes Taste Overly Salty 

No. I know it may seem like that is an outrageous amount of salt being used, but they will not be overly salty. The salt helps to raise the boiling point of the water, which breaks down the potatoes more and offers a silky and creamy texture. Then the salt will create a crust on the potatoes, that is absolutely incredible. 

What Is The Best Salt For Salt Potatoes 

I recommend regular table salt. The cheap old salt works great and offers the best flavor in my opinion. I have seen others use other varieties like sea salt, Himalayan, and I find regular table salt is best.

How Long Do Syracuse Salt Potatoes Store In Fridge 

You can keep any leftover potatoes in the fridge for 3-4 days. We generally eat them rather fast, because quite frankly they are incredible. But, they will store for a handful of days in the fridge. They are best warm but reheat rather. 

How Do I Reheat Leftover Salt Potatoes 

Simply warm them up in the microwave for a quick reheat. I think they taste rather well the next day. I have also used these potatoes in other recipes to help make them take on different flavors. Hash is my go-to recipe with these leftover Syracuse potatoes.

Ingredients

  • 1 cup Salt
  • 5 pounds bite size potatoes
  • 1 cup melted butter
  • 8 Cups Water

Instructions

  1. Place Potatoes in your instant pot.
  2. Add Water.
  3. Pour in Salt.
  4. Cook on manual high pressure for 10 minutes.
  5. Do a Quick Release.
  6. Drain water.
  7. Pour melted butter over potatoes.
  8. serve.

  1. Ooh don’t have instant pot and really don’t want to get one, can I do this in stock pot and have same results

    1. @Nancy, It’s obviously a mistake, but in the recipe’s nutritional contents it says: “CARBOHYDRATES: 0g”

      1. Yes it must be an error on the nutritional count obviously potatoes have lots of carbs

  2. 1st attempt with what was my daughter’s 1st Instant Pot. She left it at my house and discovered there is now a version that has a air fryer. Lucky me!

  3. Ah! I live in Virginia but was just visiting the Syracuse area. Stopped in Mexico/Pulaski at Dan’s Chicken Shack upon recommendation for the chicken of course, but also the salt potatoes.

    They ran out by the time we got there !

    Am gonna try this insta pot recipe at home!
