Piña Colada Popsicles
I admit I totally have an addiction to Pina Colada! It is one of my favorite flavors ever. I literally could sip Pina Coladas all day long during the summer. With that being said, I wanted to create a fun way to enjoy Pina Coladas that even the kids can enjoy! Meet your new favorite treat to enjoy all summer long, Non-alcoholic Pina Colada Popscicles! (Don’t worry, if you are craving an adult version I teach you how to easily make this as well!)

Ingredients:
- 1 cup pineapple chunks or crushed, fresh or canned
- 13.5 oz coconut milk, full fat (one can and not the carton drinking kind)
- ⅓ cup agave syrup

How to make Pina Colada Popsicles
- In a blender add all the ingredients until creamy.
- Fill each popsicle mold until there is about ¼ inch gap at the top.
- Insert the popsicle sticks into the center of each mold and gently tap the popsicle molds on the table a few times to remove any air bubbles.
- Freeze the popsicles until completely set or for at least 6 hours.
- To remove the popsicles from the mold, run hot water over the outside of the popsicle molds and wiggle until you can pull out the popsicles, which should be about 15 seconds.
Tips Tricks and FAQs
- Feel free to use your favorite sweeteners like honey or maple syrup. I like agave since the flavor isn’t so strong.
- If you want a layered, don’t blend all the ingredients together. Simply blend the pineapples, then add 1-2 tablespoons of pineapples in the popsicle mold, then 1-2 tablespoons coconut milk, and repeat.

Storage
Once the popsicles are frozen, remove them from the mold and wrap them individually in plastic or parchment paper then store them in a freezer-safe bag.

Can I add alcohol?
You need to be careful adding too much alcohol to popsicles because it freezes at a different temperature much colder and adding too much alcohol will not make them freeze, they will become slushy instead. In this recipe you can add 1 ½ Tablespoon of white rum and you can also pre soak your pineapple for about an hour in alcohol.

Can I use frozen pineapple to make pina colada popsicles?
Yes, you can. If you choose to use frozen pineapples you will want to add ¼ cup of water or coconut milk so it blends easier.
