What is a hobo dinner?

If you have been camping you might have had a hobo dinner before, or better known as a tin foil dinner. 

Basically, it consists of a protein, a bunch of vegetables, and seasoning that is wrapped up in foil that is then cooked over the campfire. Over the years more and more people are making these right at home grilling up their hobo packets on the grill. No matter how you make them they are simply delicious.

What do I need to get started?

  • Sausage – smoked sausage, hot dogs, or your choice
  • Potatoes – any
  • Carrots – any
  • Onion – any
  • Olive oil – canola or vegetable oil is fine
  • Ranch Seasoning packet – you can use spicy if you like it a bit hotter
  • White wine – or chicken broth
  • Thyme sprigs – this is optional
  • Heavy-Duty Tin Foil

How to Make Hobo Dinner Packets

  1. Preheat the grill to 400°.
  2. Cut 4 large pieces of tin foil. Spray with non stick cooking spray.
  3. Divide the sausage between the 4 pieces of tin foil and place in the middle of the foil.
  4. Divide the vegetables between the foils.
  5. Sprinkle the ranch dressing over the vegetables, then drizzle a tablespoon of oil over each packet of vegetables.
  6. Add a thyme sprig to each packet and carefully pull up the sides of the tinfoil.
  7. Add a tablespoon of white wine to each packet.
  8. Pull two sides together in the middle and fold down tightly.
  9. Fold the ends up tightly to seal.
  10. Place on the grill and close the lid. Cook for 10 minutes, then turn over and continue cooking for 8 to 10 minutes until vegetables are tender.
  11. Remove and carefully open the top. CAUTION: packets contain hot steam!
  12. Enjoy!

Tips Tricks and FAQs

  • These are easy and quick to make and can be changed up.  If you prefer beef, you can use a homemade hamburger patty or substitute  meatballs.
  • You can add any vegetables that you like – cabbage, corn on the cob pieces, cauliflower, broccoli, etc.
  • Be sure to seal the packet tightly. You want to seal in the heat and moisture. 
  • If you do not use heavy-duty foil you will need to double wrap your foil packs. These will take longer to cook as well.

Storage

To store you will want to remove from the foil and then place all the ingredients in an airtight container. These will store in the fridge for up to 5 days. 

Freezer

You can also freeze these once cooked. Remove from foil, and then cool completely. Place in a freezer-safe plastic bag and then you can freeze for up to 3 months. When you are ready to enjoy, thaw and then warm back up to your desired temperature. 

Can You make Instant Pot Hobo Meals?

Yes, you can make foil packet meals right in the Instant Pot. You won’t get the grilled flavor but they are still delicious my Recipe for Instant Pot Hobo Meals.

Can you make foil packets ahead of time?

Yes, you can easily make these ahead of time. Prepare as directed and then store in the fridge or even a cooler until you are ready to cook. 

You can also freeze them after you have assembled them. Store in the freezer for up to 3 months. When you are ready to grill, thaw in the fridge overnight and then cook as directed

  • 2 pounds smoked sausage, cut into 2 inch pieces
  • 2 pounds small potatoes, cut into 1 inch cubes
  • 1 pound carrots, cut into 1 inch pieces
  • 1 onion, cut into large pieces
  • 1 Hidden Valley Ranch dressing packet
  • 4 Tablespoons olive oil
  • 4 Thyme sprigs
  • ¼ cup white wine or chicken broth

Instructions

  1. Preheat the grill to 400°.
