If you have been around for awhile you know that I absolutely love potatoes. From Funeral potatoes, to campfire loaded potatoes to garlic and rosemary Instant Pot Potatoes and everything in between.

But there is one recipe I have yet to share with you that is my absolute favorite potato in the whole world and it is melt in your mouth potatoes. 

How To Make Melting Potatoes

  1. Preheat oven
  2. Cut and Peel Potatoes to 1″ rounds
  3. Melt butter and add seasonings
  4. Coat all potatoes with mixture
  5. Sear Potatoes in a cast iron skillet
  6. Add broth
  7. Add butter to top of each potato
  8. Bake as directed below

How to Store Melt in your mouth Potatoes

If you have leftovers you can store them in your fridge in an airtight container, but they will lose some of that melt in your mouth flavor and creaminess that you can taste right out of the oven.
These will last up to 3 days when properly stored.

What are Melting Potatoes?

They are crispy on the outside and still soft and fluffy on the inside. They practically melt in your mouth they are so delicious.

Tips Tricks

  • Using a cast-iron skillet is the key to successful melting potatoes. 
  • Use fresh herbs. Choose ones that are subtle, but yet full of delicious flavors that complement the potatoes. I love Thyme, Oregano, and Rosemary to name a few. 
  • You want to be sure you handpick your potatoes. The ones in the bag typically are too small for this recipe. Using small potatoes means you are doing a lot of peeling.
  • This recipe is best served hot and fresh right out of the oven that way it is melt in your mouth perfection. Use Idaho potatoes or Russet potatoes for this recipe.

What to serve with potatoes

You can serve just about anything with these melt in your mouth potatoes. I love pairing it with red meat that we throw on the grill and then with a vegetable or side salad.

Prep Time: 10 minutes
Cook Time: 30 minutes
Total Time: 40 minutes

Ingredients

  • 4 Russet Potatoes
  • 10 tbsp. butter
  • 2 tbs olive oil
  • 3 cloves garlic chopped
  • 1 cup chicken broth
  • 1tsp rosemary 
  • 1 tsp thyme

Instructions

  1. Preheat oven to 400
  2. Peel Potatoes and cut into 1" thick rounds
  3. Melt 4 tbsp butter and add seasonings.
  4. Coat Potatoes with melted butter and seasonings mixture
  5. add olive oil to cast iron pan
  6. Add to preheated cast iron pan and sear both sides of potatoes till brown about 4 minutes per side
  7. Pour chicken broth into cast iron pan
  8. add a slice of butter to the top of each potato
  9. bake for 30 minutes.
  10. remove and serve.
