The snow is already falling for the year, and temperatures are getting colder. To warm us up, I whipped up my favorite instant pot soup!

You can freeze this soup if you would like. Just allow room at top of the container for the soup to expand as it freezes. 

Then store in the freezer for up to three months. Thaw in the fridge the night before you plan to eat. Or run cool water over the container for a quick thaw.

Yes, you can. Just follow the directions below and then let the soup simmer until the beef is cooked through and the soup has time to marinate the flavors.

Instant Pot Beef and Barley is a total comfort soup. Tender and flavorful beef, barley, and veggies in a savory broth. 

Serve up this Instant Pot barley soup any day of the week for a quick and easy dinner idea. Simple, healthy, and loaded with nutrients to boost you for the day. 

Ingredients

  • 1 tbs olive oil
  • 2 stalks celery
  • 1 onion chopped
  • 3 cloves chopped garlic
  • 3 large carrots chopped
  • 1 pound beef stewing meat
  • 4 cups beef broth
  • 2 sprigs thyme
  • 1 bay leaf
  • 1 cup barley ( I used quick barley)
  • 2 cups cubed potatoes 

Instructions

  1. Place pot on saute
  2. Add oil, onions, garlic, celery, and carrots.
  3. Cook 2-3 minutes until onions are tender.
  4. Add stew meat
  5. Add broth
  6. Add thyme sprig and bay leaf
  7. Cook on high pressure for 20 minutes
  8. Do a quick release
  9. Add barley and potatoes
  10. Cook on high pressure for 5 minutes.
  11. Do a quick release
  12. remove the thyme and bay leaf and serve.
