- 1 tbs olive oil
- 2 stalks celery
- 1 onion chopped
- 3 cloves chopped garlic
- 3 large carrots chopped
- 1 pound beef stewing meat
- 4 cups beef broth
- 2 sprigs thyme
- 1 bay leaf
- 1 cup barley ( I used quick barley)
- 2 cups cubed potatoes
- Place pot on saute
- Add oil, onions, garlic, celery, and carrots.
- Cook 2-3 minutes until onions are tender.
- Add stew meat
- Add broth
- Add thyme sprig and bay leaf
- Cook on high pressure for 20 minutes
- Do a quick release
- Add barley and potatoes
- Cook on high pressure for 5 minutes.
- Do a quick release
- remove the thyme and bay leaf and serve.
